Sweet Potato Toast Recipe
Sooooo.... I lovee toast, if I could eat it for breakfast everyday I would. However, I am trying to reduce the amount of carbs I eat, (isn'teveryone?) so starting my day off with two pieces of bread isn't going to cut it anymore. I tried this recipe for the first time this week and to my surprise it's actually delicious! It is only fair that I pass it along to anyone else who is looking to cut carbs, So here it is, a recipe for sweet potato toast.
Ingredients Needed
- Sweet Potato
- Eggs
- Salt & Pepper to taste
Directions
- Slice sweet potato into toast size slices. Sweet potatoes can be difficult to slice so be extra careful during this step.
- Turn oven on to "broil."
- Place sweet potato toast slices onto oven rack and cook for 5-7 minutes, checking frequently.
- Time for Eggs! Grab you frying pan and butter/grease it to keep the eggs from sticking.
- Fry up eggs to preference, I like mine over medium.
- Salt and pepper eggs to taste.
- When eggs are finished put them right on you sweet potato toast slices and Well-Ah, you have sweet potato toast!
